I visited Di Bufala in Napa, a small dairy farm trying something new — raising Asian (by way of Italy) water buffalo in California, American dairy cow-style. The first calves, born just this summer, are happy and curious, more like hooved and horned dogs than cattle. A couple years in, rancher Andrew and his crew are already turning out some of the most delicious gelato this side of the Atlantic (you can taste it at Nick’s Cove in Marshall). Next up for them — cracking the code for consistently good buffalo mozzarella.
